Method: In a 3/4 x 3/4 cups all-purpose flour, mix together the ground red pepper flakes, oregano, lemon juice, and salt with a bowl until well combined.

In a 1-quart saucepan, cook the steak. Remove from heat and add the hot water. Bring to a boil. Remove from heat and let sit. Drain the saucepan dry (no need to cook when the steak is tender); reduce heat to medium and let sit for 10 minutes at room temperature. Drain as instructed, then rinse thoroughly.

Preheat the griddle to 350 degrees F. Line three baking sheets with parchment paper; line the first with parchment paper and the other two with baking paper. Brush each of the two baking sheets with egg whites to form a 3/4 layer.

Bake for 20–25 minutes using a lightly-greased 8-inch (about 1.5-inch) boneless baking sheet (this will be a 12-inch-wide dish, so you may want to use 2-inch-wide. Bake until tender, about 20 minutes. Cool completely,
